Temperature, light and oxygen are the main enemies of olive oil, because they threaten its precious organoleptic and nutritional characteristics.

In the last few years, Olitalia has invested a lot of resources to reduce the negative effects that temperature, light and oxygen have on the quality of our products.

Our state-of-the-art plant is one of the few in Italy to have a quality controlled temperature system. The constant temperature of 16-18° is mantained inside the insulated tanks, where extra virgin olive oil is stored. 

The new Low Temperature Two Steps Filtration System helps to mantain a constant temperature during the filtration process, avoiding the thermal shocks which are common during the classical filtration process.

Thanks to the use of nytrogen during the process and during the storage, the presence of oxygen (both liquid and the one inside the tank) is significantly removed. In this way, we preserve all the characteristics of oil.
